As it starts to heat up outside, take advantage of the weather by going on walking trails, having BBQs at the park, and of course relishing in some sweet summer treats! Today we share with you some of the simplest summer recipes that are refreshing and delicious.
1. Waffle Ice Cream Sandwiches
Store bought waffles and ice cream are the best way to go about for this! To assemble, toast waffles until crisp and golden. Place a scoop of ice cream on one warm waffle. Top with another warm waffle and gently press together. Your ice cream sandwich is now ready to go! This simple dessert is a perfect way to cool off and treat yourself.
2. Fresh Squeezed Lemonade
There is nothing quite like fresh, squeezed lemonade on a hot summer day. For this you will need 1 1/2 cups sugar, 1/2 cup boiling water, 1 tablespoon grated lemon rind, 1 1/2 cups fresh lemon juice (8 large lemons) and 5 cups of water. Stir together sugar and 1/2 cup boiling water until sugar dissolves. Stir in lemon rind, lemon juice and 5 cups of water. Chill and serve over ice.
3. Strawberry Kiwi & Lime Frozen Yogurt
For this recipe, you will need 3 1/2 cups chopped strawberries, 3 kiwi’s peeled and chopped, 1 lime zested and juiced, 3/4 cup granulated sugar, 1/4 cup honey and 1 cup of Greek style plain yogurt. Serve with fresh fruit like strawberries, bananas, kiwi or cantaloupe and you are done!
4. Banana Ginger Smoothie
This recipe not only tastes good, but helps to soothe digestion, heartburn, nausea and any other stomach issues. You will need 1 sliced banana, 3/4 vanilla yoghurt, 1 tablespoon honey and ½ teaspoon of freshly grated ginger. Combine the banana, yoghurt, honey and ginger. Blend until smooth.
